Celeriac



This rather ugly thing is a celeriac which for some strange reason reminds my husband of a Ood from Dr Who. Don't ask I don't know what goes on in the man's mind either.







Celeriac makes lovely soup.

1 celeriac peeled and cut into largish cubes.
1 onion chopped.
800ml vegetable stock.
250ml cream.
salt and pepper.

Saute in onion in a little oil until soft. Add the celeriac and the stock. Bring to the boil, turn down the heat and simmer for 20-25 minutes until the celeriac is tender. Allow to cool for a bit and blend until smooth. Season to taste. Add the cream and gently reheat.  
As you can see in the picture it is quite a thick soup which is the way my lot like it but you can add more stock if you want to. It is easier to add a little more stock than thicken the soup.
                                               
Celeriac also makes a wonderful mash that goes great with any kind of bean stew.. You just boil it like you would potatoes, drain well and mash it with butter, salt and pepper. ( I forgot to take a photo.)

  1. I've never had celeriac, but I picked one up in Lidl today and put it back. It's the smell which put me off, well that and the fact that I didn't know how to cook it.

    1. It taste better than it smells. It has a mild celery taste. You can mix it in with other veg in stews etc.
