Dinner on the cheap.

There is a lot of competition out there in the shops with fruit and vegetables. This combined with a few store cupboard ingredients can help to put together dinner very cheaply.
I bought a bag of baby potatoes and a punnet of cherry tomatoes in my local shop for 39 cent each and added a roll of ready made puff pastry for 1.19.

Tomato Tart

Garlic and Herb Potatoes.

All ready in my kitchen garlic, olive oil, tomato paste, balsamic vinegar. and rosemary from the garden.

Heat the oven to 190 fan.
Finely chop 2 cloves of garlic and a sprig of rosemary, mix with salt and pepper and a glug of olive oil in a roast tin. Cut the potatoes in half and toss in the mix. you want them to be lightly coated.
Bake in the oven for 30 to 40 minutes stirring once in a while.

Roll out the puff pastry and score a rime around the edge. Spread with a 2 tablespoons of tomato paste. Cut the cherry tomatoes in quarters and spread over the pastry. season well with salt and pepper. sprinkle a little sugar over the tomatoes and a splash of balsamic vinegar if you have it.

Bake for 25 minutes until the pastry is crisp and the tomatoes soft.
