Simple But Tasty



I bought a net of 3 lovely Spanish onions in Aldl last week for 69 cent. I felt they were too nice just to chop up and add to something else. I decided to stuff them and bake them. I cut the top off and peeled the papery skin down to the root and cut a very thin piece off, just enough for the onion to stand but still stay together. I then scooped out the onion flesh and put it into the processor along with a slice of bread, parsley, salt and pepper. A quick pulse and then packed it all back into the onion. A drizzle of olive oil and into the oven for 20 minutes.

Served with some potato slices and peas.
