Red Dragon Pie.



This is like a vegetarian Shepard's pie. I use to make it a long time ago. I was looking through my recipe folder and found a page with the list of ingredients but the rest of the recipe was missing.I have no idea where the recipe original came from. It is one of those recipes that needs a bit of forward planning but is great for using up bits and pieces.
It is made with aduki beans which the Chinese call red dragon so that is where the name comes from

1 tin aduki beans, Rinsed and drained.
1 onion, chopped
3 carrots. Peeled and chopped.
50g cooked rice.
275mls stock
2 tbsp soy sauce.
1 tbsp tomato puree.
1tsp mixed herbs.
salt and pepper.

450g cooked mashed potato.

Fan oven 180

Heat a little oil in a pot and gently cook the onion until soft. add the carrots and cook for a few minutes. pour in the stock and bring to the boil. turn down the heat and simmer for 10 minutes.
Add the cooked rice, aduki beans, soy sauce, tomato puree, herbs and seasoning and simmer for another 5 minutes until the carrots are cooked and the liquid has cooked down a little.
Pour into a oven proof dish and top with the mashed potato.
Cook for 25 minutes until the potatoes are golden brown.
