Old Fashioned Pudding

I was rooting in the freezer the other day a found a bag of chunks of brown bread, so I decided to dig out a very old recipe I had for a brown bread pudding.I have to say it was nicer than I remember.




Line a 8x8 baking tin.
Oven 160C fan.

225g brown bread, crusts removed.
275ml milk.

Put the bread into a bowl and cover with the milk. mash with a fork until there is no lumps. Leave to steep for 30 minutes.

50g melted butter.
1 egg beaten.
75g brown sugar.
175g dried fruit.
1/2 tsp ground cloves.
1/2 tsp ground nutmeg.
1/2 tsp ground cinnamon.
grated rind of a small orange.

Mix all the ingredients into the brown bread and milk mixture.
Pour into the prepared tin and bake for 85 minutes.

Lovely hot with a blob of cream as a desert or cold with a coffee.

  4. I've never eaten any type of bread pudding, it's just never appealed. I think it's because I don't think of bread as something sweet. I really should give it a go though, I bet I'm missing out on something really yummy.
